A sustainable ethos and seasonal creations
At Glas, they believe in the beauty of simplicity, using only seasonal vegetables and local produce to create gourmet dishes that both surprise and delight. The Glas ethos is rooted in sustainability, showcasing Irish-grown ingredients and supporting local farmers. Every dish is a celebration of creativity, with flavours and textures that push the boundaries of vegetarian and plant-based cuisine.
“We love Irish food at Glas – and we want to celebrate great Irish veg,” says Head Chef Malte Half, whose foraged ingredients such as rock samphire, nettles and blackberries have appeared on the menu alongside carefully crafted dishes like Fried Cauliflower, Buckwheat Hummus, Almond Crumble, Celery and Truffle Vinaigrette or Chestnut Parfait, Walnut Bread, Cider Carrot, Preserved Grapes.
Malte is a master of his craft, with a passion for experimenting with different flavours and ingredients. Malte’s favourite dish on the menu is the Miso Parsnip, Carrot Risotto, Artichoke Granola, and Candy Carrot. He loves that this dish showcases Ireland’s local vegetables and packs a real flavour punch. Inspired by the zero waste movement Malte and the team also want to reduce the amount of waste in the restaurant, so every part of a vegetable from stem to peel is used. They’ve even recently created coffee sweets made from the leftover coffee grounds.
A milestone in gluten-free dining
In May Glas became Ireland’s first fully gluten-free fine dining restaurant, making it a haven for coeliac and gluten-intolerant diners. With no wheat, barley, or rye handled in the kitchen, every dish on the menu is now completely free of gluten, marking a significant development in the Irish dining scene.

Glas has recently launched a Brunch Menu which is served every Saturday and Sunday. Some of the standout dishes on the new brunch menu include: Potato Waffles Cashew Ricotta, Gorse Honey, Poached Pears; Smoked Carrot and Potato Hash, Crispy Hens Egg, Dill Cream; Flamed Halloumi, Roast Onion, Potato Rösti, Pea and Mint Salsa.
